Fridays are always days with "our kids" at the church for district meeting. We're not in charge. They are - and what great leaders and teachers they are, teaching from "Preach My Gospel."
After the meeting there was a "secret" plan to take Sister Burton to lunch for her birthday. That was a good idea, but these young missionaries are allotted barely enough money each month to buy the basics, if that, let alone any extras. So Elder de Paula and I decided to treat them all to a Birthday Lunch. The looks on their faces was worth more than a fortune!

We're going to miss these two great sisters when we leave - Sister Frodsham and Sister Burton.

Here at our apartment, as Sister Burton blows out the candles on her birthday "cake" she asked "why three?" Didn't I read somewhere that three meant perfect?

An ice cream cake roll is our own children's favorite birthday cake. Our kids always get to choose what flavors go inside - and they do get creative! I made this one for Sister Burton's birthday. It has a thin layer of strawberry jam and is filled with vanilla ice cream, and is dusted with powdered sugar and candy sprinkles. She love it. It's just a touch of home for me to make one here in the mission field.

That's a fun tradition. Can i have your recipe for the roll up ice cream cake? You are doing good works and the Lord will bless you.
Here ya' go K's - and by the way, we are escorting the missionaries to the temple on the 24th. Guess who's in the group?
Ice Cream Cake Roll
Ingredients:
• 3/4 cup cake flour
• 3/4 teaspoon baking powder
• 1/4 teaspoon salt
• 4 eggs
• 3/4 cup sifted sugar
• 1 teaspoon vanilla extract
Preparation:
Sift flour once, and measure. Combine baking powder, salt, and eggs in a bowl. Beat with an electric mixer until egg mixture is thick and light lemon-colored. Fold in flour and vanilla. Spray a 15x10x1-inch jelly roll pan.
Spread batter in and bake at 400 for 8 minutes or until light golden color. The center should spring back when lightly touched.
Turn out onto a clean, damp dish towel. Wrap loosely in cloth and cool on rack. Spread with jam and cut chunks of ice cream; re-roll and sprinkle with powdered sugar. Freeze.
What a great looking bunch of missionaries! Especially the one sitting to your right, Sister de Paula!;)
Also, thanks for the recipe, can't wait to try it. Thank you for all you do for "your kids." I know my kid will miss you. Hope you had a nice visit with him!
I'm glad your making this posts as you wind down your mission. Keep 'em comin' before it's too late.
BTW, on last week's P-day, we treated 20 hungry missionaries--after their big soccer game in the muddy Tarma Stadium--to a dinner at the best restaurant in town. Our total cost was US$70! I'll bet that you ended up paying a LOT more. I'm guessing that Tarma and New York are on the complete opposite ends of the cost-of-eating-out spectrum.
Scott, our bill was just over twice what yours was for half the number of missionaries. Yup, I guess you're right:-0
